Oh dear! Of coarse(!), it could be that the course cut pate could refer to something caught or prepared during coursing or maybe on a course. At least there is consistency - the error is repeated.
Spread pastry wth layer of course cut pate, (do not spread completely up to edge) repeat with cooled mushrooms
